Ingredients:

• 500 g – chicken, cooked and shredded
• 3 cups – basmati rice, cooked
• 1 cup – carrot, Cabbage and beans, julienned
• 1 – capsicum, de-seeded, julienned
• 2 – eggs
• 1 tsp – white pepper powder
• 2-3 flakes – garlic, chopped
• 1 – onion, thinly sliced
• Soya sauce to taste
• Oil
• Salt to taste

Method:

  1. Cook rice and keep aside.
  2. Heat oil and saute onions, garlic, capsicum, cabbage, beans and carrot.
  3. Mix with salt and pepper and set aside.
  4. Scramble eggs in the pan.
  5. Add sauteed vegetables and cooked chicken mix well.
  6. Mix in the rice gently.
  7. Season with soya sauce and serve hot.
