Ingredients:

• 3 – lb Chicken
• 1 – large Onion
• Salt to taste
• 1 tbsp – ground chillies
• 1 tbsp – granulated Sugar
• 1 cup – water
• 4 – Garlic Cloves
• 3 tbsp – vegetable oil
• 2 tbsp – minced Lemon grass
• 4 tbsp – nuoc mam (Vietnamese fish sauce)
• 1 tbsp – caramel sauce

Method:

  1. Rinse chicken and dry well. Cut into small pieces.
  2. Peel garlic and slice finely.
  3. Cut onion into halves lengthwise and then cut lengthwise into 1/2 inch strips.
  4. Heat oil in large frying pan over medium heat.
  5. Add a pinch of salt, garlic and onion.
  6. Fry over medium heat until onion becomes translucent.
  7. Add lemon grass and chilli. Fry 1-2 minutes until fragrant.
  8. Add chicken and cook until lightly brown.
  9. Add fish sauce, sugar and caramel sauce. Mix well.
  10. Add 1 cup water and cook for 45 minutes or until chicken is tender.
  11. Stir occasionally and add more water if necessary.
  12. Serve hot with caramel sauce
  13. To prepare caramel sauce:
  14. Mix 1/2 tsp sugar with 4 tbsp water in heavy saucepan.
  15. Bring to a boil over medium heat and let it boil until mixture changes colour.
  16. Turn heat down to low and cook until brown.
  17. Add 1/2 cup water to mixture. Stir until sugar is dissolved
  18. Remove from heat and store in a jar in the refrigerator.
