
Ingredients:
• 4 – parathas
• 1 large – Onion
• 1/2 cup – Green peas
• 1 – Capsicum
• 5 – Green chillies
• 2 tbsp – Corn flour
• 2 tbsp – Maida
• 1 pinch – red food color
• 1/2 tsp – pepper powder
• oil for frying and sauteing
• salt to taste
Method:
- Cut parathas into squares.
- Make a batter of maida, corn flour, salt, a pinch of red colour and pepper powder.
- Chop finely all vegetables.
- Heat oil in a kadai, dip paratha in batter and fry. Keep aside.
- In another non-stick pan, heat 2 tbsp of oil.
- Add chopped onion and fry till it becomes soft.
- Add other vegetables and saute for 2 to 3 mins.
- Then add the fried parathas and toss.
- Garnish with coriander leaves.
- Serve hot with raita.
