Ingredients:
• 1/4 cup – butter, softened
• 1 cup – white Sugar
• 1 cup – cherries, drained and chopped
• 1/2 cup – chopped Walnuts
• 1 1/2 cups – all-purpose flour
• 6 tbsp – unsweetened cocoa powder
• 1 Egg
• 1 tsp – vanilla extract
• 1/2 tsp – baking soda
• 1/2 tsp – salt
Method:
- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- In a large bowl, cream together the butter and sugar until smooth.
- Blend in the egg and vanilla essence.
- Combine the flour, cocoa, baking soda and salt. Stir into the creamed mixture.
- Finally, mix in the chopped cherries and walnuts.
- Drop spoonful of batter on to the prepared cookie sheets.
- Bake for eight to 10 minutes in the preheated oven.
- Allow cookies to cool on baking sheet for five minutes before removing to a wire rack to cool completely.
