Ingredients:
• 100 g – all-purpose flour
• 1/4 tsp – baking powder
• 1 tbsp – cocoa powder
• 75 g – caster Sugar
• 100 ml – Milk
• 1/3 cup – Olive oil/ unsalted Butter
• 2 tbsp – roasted chopped Pine Nuts
• For Fudge sauce:
• 30 g – unsalted Butter
• 100 g – dark chocolate, broken into pieces
• 300 ml – Milk Cream
• 20 g – icing Sugar
Method:
- Preheat the oven to 150 degree celsius and grease pudding moulds.
- Sift dry ingredients and add wet ingredients and blend until a smooth batter is attained.
- Add roasted nuts.
- Pour into moulds, place on a baking tray and bake for 30 minutes.
- For fudge sauce:
- Place ingredients in a pan or double boiler over low heat and cook, frequently stirring, until thick.
- Take out puddings, pour sauce over top and garnish with nuts.
- Serve chilled .
