Ingredients:

• 200g – noodles
• 200g – Chicken (cooked and shredded)
• 200g – cabbage, shredded
• 2 Bamboo shoots
• 2 eggs
• 1/2 cup – Chicken stock
• 60g – Mushrooms
• 1 flake Garlic
• 1-inch piece Ginger
• 2 stalks- Leek
• 2 tbsp – soya sauce
• 2 tsp – Corn flour
• Salt to taste
• Oil for frying

Method:

  1. Boil and drain the noodles.
  2. Heat oil and pour in slightly beaten eggs. Cook until set. Remove from pan.
  3. Cool and cut into strips.
  4. Reheat pan. Add oil and fry crushed garlic, sliced leeks, shredded bamboo shoots, cabbage, mushrooms, salt, sliced ginger, and shredded meat.
  5. Add stock and soya sauce blended with corn flour. Let it simmer until the sauce thickens.
  6. In another pan, fry cooked noodles in deep fat for about 5 minutes.
  7. Transfer it on to a hot dish.
  8. Garnish with egg strips and pour meat mixture over noodles.
