Ingredients:
• 200g – noodles
• 200g – Chicken (cooked and shredded)
• 200g – cabbage, shredded
• 2 Bamboo shoots
• 2 eggs
• 1/2 cup – Chicken stock
• 60g – Mushrooms
• 1 flake Garlic
• 1-inch piece Ginger
• 2 stalks- Leek
• 2 tbsp – soya sauce
• 2 tsp – Corn flour
• Salt to taste
• Oil for frying
Method:
- Boil and drain the noodles.
- Heat oil and pour in slightly beaten eggs. Cook until set. Remove from pan.
- Cool and cut into strips.
- Reheat pan. Add oil and fry crushed garlic, sliced leeks, shredded bamboo shoots, cabbage, mushrooms, salt, sliced ginger, and shredded meat.
- Add stock and soya sauce blended with corn flour. Let it simmer until the sauce thickens.
- In another pan, fry cooked noodles in deep fat for about 5 minutes.
- Transfer it on to a hot dish.
- Garnish with egg strips and pour meat mixture over noodles.
