Ingredients:

• 1 cup – red bell pepper, cut as small cubes
• 1 – onion, chopped finely
• 1/2 cup – Cream cheese
• 2 – Garlic cloves, minced
• 2 tsp – Parsley leaves, chopped
• To taste – salt
• To taste – pepper powder
• 1 tsp – Olive oil

Method:

  1. Take olive oil in a microwave safe bowl and heat for a minute in high, in a microwave oven.
  2. Add the finely chopped onions, salt and minced garlic cloves, to the hot oil and cook for 5 minutes (stir once in between), in high, in a microwave oven.
  3. Finally, add the red bell pepper pieces and cook for 8-10 minutes again in high.
  4. Take off the cooked vegetables and let them cool.
  5. Add the cream cheese, parsley leaves and pepper powder to the already cooked vegetables. Blend as a chunky dip, with a hand blender.
  6. Serve them immediately or chilled.
