
Ingredients:
• For the dressing:
• 1/2 cup – low fat mayonnaise
• 1/2 cup – low fat Yoghurt
• 1 tsp – vanilla essence
• 1/4 tsp – grated Ginger
• 1/4 tsp – powdered Cinnamon
• For the salad:
• 2 cups – cubed, steamed Chicken
• 2 cups – seedless green Grapes
• 1 cup – chopped Celery
• 2 cups – fresh pineapple, cubed (reserve the shell for serving)
• 1/2 cup – finely chopped red Capsicum
Method:
- Combine all the salad ingredients, except pineapple, in a large bowl and set aside.
- Combine all the dressing ingredients in a small bowl.
- Pour the dressing over the salad.
- Cover and refrigerate for at least 1 hour.
- To serve:
- Line a tray with plantain leaf or lettuce.
- Place the pineapple shell on it.
- Add the chopped pineapple into salad. Toss well.
- Spoon the salad into the pineapple and serve.
