Ingredients:
• 1/4 cup – butter, melted
• 1 cup- Coconut Sugar
• 1/3 cup -cold water
• 4 -large Egg whites
• 1 -large whole Egg
• 3 tbsp -canola oil
• 1 tsp -vanilla
• 1.25 cups -whole Wheat pastry flour
• 1/2 cup -unsweetened cocoa powder
• 1 tsp -baking powder
• 1/4 tsp -ground Cinnamon
• 1/8 tsp- salt
• 1/8 tsp -Kashmiri chilli powder
• 1/3 cup -chopped bittersweet chocolate
• 2 tbsp- hot strong coffee (optional)
Method:
- Preheat oven to 350 degrees F. Lightly grease a brownie pan and set aside.
- In a bowl, add the melted butter.
- Whisk in the sugar and water.
- Whisk in eggs, oil, and vanilla. Stir in flour, cocoa powder, baking powder, cinnamon, salt, and chilli powder. Mix well.
- Stir in the chocolate pieces.
- Pour batter into the prepared pan.
- Bake for 23 to 25 minutes or until a wooden toothpick inserted near the centre comes out clean. Cool in pan for 10 minutes.
- Remove from pan by lifting up the foil. If you are using the strong coffee, brush the hot brownie with it. Let this cool completely.
- Cut into bars and sprinkle with powdered sugar and/or cinnamon-sugar.
