Ingredients:

• 1 cup – pastry flour, sifted
• 1/2 cup – Sugar
• 3 eggs
• 1 cup – Milk
• 2 tbsp – rum
• 250g – cherries, pitted
• 2 tbsp – icing Sugar

Method:

  1. Preheat the oven to 325 deg F.
  2. Place the flour in a mixing bowl.
  3. Mix in the sugar.
  4. Make a well in the middle of the flour.
  5. Place the eggs in the well, add the milk and the rum.
  6. Mix until the batter becomes smooth.
  7. Add the pitted cherries to the batter.
  8. Pour the batter into a buttered pie plate.
  9. Cook in the oven at 325 deg F for 40 mins.
  10. Cool, unmould and sprinkle the clafoutis with icing sugar.
  11. Serve with strawberry fruit sauce.
