
Ingredients:
• 1 cup – pastry flour, sifted
• 1/2 cup – Sugar
• 3 eggs
• 1 cup – Milk
• 2 tbsp – rum
• 250g – cherries, pitted
• 2 tbsp – icing Sugar
Method:
- Preheat the oven to 325 deg F.
- Place the flour in a mixing bowl.
- Mix in the sugar.
- Make a well in the middle of the flour.
- Place the eggs in the well, add the milk and the rum.
- Mix until the batter becomes smooth.
- Add the pitted cherries to the batter.
- Pour the batter into a buttered pie plate.
- Cook in the oven at 325 deg F for 40 mins.
- Cool, unmould and sprinkle the clafoutis with icing sugar.
- Serve with strawberry fruit sauce.
