Ingredients:
• chopped Spinach and stalks – 4 cups
• Papaya cubes – 1 cup
• grated Coconut – 2 cups
• Dried red chillies – 4 to 5
• Tamarind size of small marble
• salt to taste
• oil – 2 tbsp
• Onion – 1/2 cup, finely chopped
• wash, drain and chop the Spinach leaves. Cut tender stems into 5 cm long pieces.
• Use under ripe papaya. It must be firm, just turning pale yellow. Peel it, remove the seeds and chop the flesh into 2 cm cubes.
Method:
- Cook spinach and papaya together with little water till soft.
- Fry chillies in 1 tsp oil till crisp and grind
