Ingredients:

• 2 cup – fresh Coconut Milk
• 1 cup – basmati Rice
• 1 tbsp – Curd
• 4 – Red Chillies
• 1 – Onion
• 1 – Tomato
• 1 tsp – Ginger
• 1 tsp- Garlic
• A few – Cashew nuts
• Salt to taste
• 3 tsp – oil
• 1 tsp – Ghee

Method:

  1. Grind ginger, garlic, red chillies with curd into paste.
  2. Add oil and ghee in a large pan and saute onions till light brown.
  3. Add tomatoes and the paste and saute well till oil separates from the gravy.
  4. Add coconut milk and bring to boil.
  5. Add rice and salt and cook in low flame till done.
  6. Fry cashew nuts and add to rice.
  7. Garnish with coriander leaves.
  8. Serve hot with onion raita.
