Ingredients:
• 1/2 cup – tinned Pineapple
• 175 g – Maida
• 150 g – Sugar
• 1 cup – desiccated Coconut
• 1/2 tsp – baking powder
• 1 pinch – baking soda
• 4 drops – Pineapple essence
• 2 – eggs
• 100 g – Butter
Method:
- Set the oven temperature to 180 degree Celsius.
- Grease a baking tray and keep aside
- Sieve maida, baking powder and soda together twice
- Beat butter and sugar well until it becomes creamy
- Add eggs to this creamy mixture and beat it with a electric blender until fluffy.
- Gradually add maida mixture to it and blend well.
- Add desiccated coconut and crushed canned pineapple to the cake batter and mix it well.
- Pour the batter to the greased tray and bake it for 40 – 45 mins
