Ingredients:

• 1/2 cup – tinned Pineapple
• 175 g – Maida
• 150 g – Sugar
• 1 cup – desiccated Coconut
• 1/2 tsp – baking powder
• 1 pinch – baking soda
• 4 drops – Pineapple essence
• 2 – eggs
• 100 g – Butter

Method:

  1. Set the oven temperature to 180 degree Celsius.
  2. Grease a baking tray and keep aside
  3. Sieve maida, baking powder and soda together twice
  4. Beat butter and sugar well until it becomes creamy
  5. Add eggs to this creamy mixture and beat it with a electric blender until fluffy.
  6. Gradually add maida mixture to it and blend well.
  7. Add desiccated coconut and crushed canned pineapple to the cake batter and mix it well.
  8. Pour the batter to the greased tray and bake it for 40 – 45 mins
