Ingredients:
• 1.75 cups – polenta (cornmeal)
• 1 cup – Milk
• 1 cup – fresh Corn
• 3/4 cup – all-purpose flour
• 1/4 cup – caster Sugar (or plain)
• 1 – Egg
• 1 tsp – salt
• 2 tbsp – Butter
• 3/4 tsp – baking powder
• 1/4 tsp – baking soda
Method:
- Preheat oven to 350 F. Spray baking pan with PAM or little butter.
- Combine cornmeal, flour, sugar, baking soda, baking powder and salt. Stir together milk, egg and butter until blended.
- Now pour the wet ingredients into dry, add fresh corn and mix well.
- Pour into the baking pan and bake for 25-30 mins until the sides get brown and a skewer comes out clean when inserted in the middle.
- Let it cool for 5 mins and then cut into slices and enjoy.
