Ingredients:

• 1.75 cups – polenta (cornmeal)
• 1 cup – Milk
• 1 cup – fresh Corn
• 3/4 cup – all-purpose flour
• 1/4 cup – caster Sugar (or plain)
• 1 – Egg
• 1 tsp – salt
• 2 tbsp – Butter
• 3/4 tsp – baking powder
• 1/4 tsp – baking soda

Method:

  1. Preheat oven to 350 F. Spray baking pan with PAM or little butter.
  2. Combine cornmeal, flour, sugar, baking soda, baking powder and salt. Stir together milk, egg and butter until blended.
  3. Now pour the wet ingredients into dry, add fresh corn and mix well.
  4. Pour into the baking pan and bake for 25-30 mins until the sides get brown and a skewer comes out clean when inserted in the middle.
  5. Let it cool for 5 mins and then cut into slices and enjoy.
