
Ingredients:
• 325 g – baby Corn (each sliced into 3 pieces)
• 350g – snow peas
• 6 eggs, boiled and sliced lengthwise into 2 pieces
• 3 tbsp – chives, finely chopped
• 270 ml – mayonnaise
• 1 tsp – Dijon mustard
• 1 red or yellow Capsicum
• 1 green Capsicum
Method:
- Rub oil on the capsicum and place under a very hot grill until the skin of the peppers is charred and blistered
- Rub off skin under cold running water.
- Dry the capsicum with absorbent paper towels and cut into 1-inch pieces.
- Blanch the snowpeas in boiling, salted water for 2-3 mins. Drain.
- Refrigerate the corn, snowpeas and capsicum for a while.
- Mix the mayonnaise and djon mustard with the chilled corn, snowpeas and capsicum.
- Sprinkle chives and garnish with eggs.
