Ingredients:

• 325 g – baby Corn (each sliced into 3 pieces)
• 350g – snow peas
• 6 eggs, boiled and sliced lengthwise into 2 pieces
• 3 tbsp – chives, finely chopped
• 270 ml – mayonnaise
• 1 tsp – Dijon mustard
• 1 red or yellow Capsicum
• 1 green Capsicum

Method:

  1. Rub oil on the capsicum and place under a very hot grill until the skin of the peppers is charred and blistered
  2. Rub off skin under cold running water.
  3. Dry the capsicum with absorbent paper towels and cut into 1-inch pieces.
  4. Blanch the snowpeas in boiling, salted water for 2-3 mins. Drain.
  5. Refrigerate the corn, snowpeas and capsicum for a while.
  6. Mix the mayonnaise and djon mustard with the chilled corn, snowpeas and capsicum.
  7. Sprinkle chives and garnish with eggs.
