Ingredients:

• 2 – big bunches of broccoli, trimmed into small florets.
• 1 cup – cooked Corn
• 1/2 cup – chopped Spinach
• 1/2 cup – mozzarella cheese
• 1/2 cup – Tomato puree
• 3 – green chillies, split lengthwise and crushed
• 1 – Garlic Clove
• 1/2 inch – Ginger
• Salt (to taste)
• Red Chilli powder (to taste)
• 1 tbsp – oil

Method:

  1. Heat oil in a non-stick pan. Add ginger, chopped garlic, green chillies and tomato puree. Stir.
  2. Then add salt and red chilli powder. Let it stew for 3-4 minutes.
  3. When masala is ready, add broccoli florets and corn, and cook them just till the masala infuses.
  4. In a bowl, mix cheese and spinach. Now pour the broccoli corn mixture into a baking dish and top it with cheese and spinach mixture generously.
  5. Bake it till the cheese browns and spinach gets crunchy. Serve hot with bread or rice.
