Ingredients:

• 500 gm – broken vermicelli, boiled
• 3 tbsp – Olive oil
• 200 gm – tomatoes, peeled and chopped
• 100 gm – onions, chopped
• 1 tbsp – minced Garlic
• 1 tbsp – minced Red Chillies
• 1 cup – boiled Corn
• 1 tsp – dried Oregano
• 1 tsp – black pepper powder
• 1 cup – grated cheese
• A few sprigs of parsley, for garnishing
• salt to taste

Method:

  1. Heat oil in a casserole for a minute.
  2. Add onions, garlic and mix. Cover and microwave on ‘High’ for three minutes until onion becomes soft.
  3. Add tomatoes and minced red chillies.
  4. Microwave on ‘High’ for three minutes more.
  5. Add corn, oregano, salt and black pepper.
  6. Mix and microwave on ‘High’ for one minute.
  7. Add vermicelli and mix well.
  8. Just before serving, sprinkle cheese over the vermicelli.
  9. Cover and microwave on ‘High’ for three minutes so that the cheese will melt.
  10. Garnish with parsley and serve hot.
