Ingredients:

• 1 cup – Wheat flour
• 3/4 cup – Corn meal
• 1/3 cup – low calorie Sugar
• 2 tsp – baking powder
• 3/4 cup – fat-free buttermilk
• 1/4 cup – fat-free sour Cream
• 1 cup – cranberries, chopped
• 1 – Egg white, whipped
• 1/2 tsp – Lemon peel, grated

Method:

  1. Preheat an oven to 350 degrees C.
  2. Prepare muffin pans with cooking spray and flour. Set aside.
  3. In a mixing bowl, combine flour, corn meal, 1/3 cup of sugar and baking powder.
  4. In another mixing bowl, combine the egg white, buttermilk, sour cream, lemon peel and cranberries.
  5. Add the flour mixture and mix well.
  6. Use an ice-cream scoop to fill muffin tins three-fourths full.
  7. Bake for 20 minutes or until golden.
