Ingredients:

• 1 kg – Spinach
• 3 cups – Chicken stock
• 1 cup – Milk
• 2 tbsp – Butter
• 2 tbsp – ground Onions
• 2 tbsp – flour
• salt and pepper
• ground Nutmeg
• ground cheese

Method:

  1. Boil spinach until just tender, cool and liquidize.
  2. This should measure approximately 2 cups.
  3. Melt butter. Add ground onions and fry until soft.
  4. Add the flour, fry a little. Do not let it turn brown.
  5. Add chicken stock to the spinach and salt and pepper to taste. Allow it to simmer for 15 minutes.
  6. Sieve or liquidize the soup and return to pan.
  7. Add 1 cup of milk and a dash of ground nutmeg, just before serving.
  8. Pour soup into bowls, and sprinkle a little ground cheese on top.
