Ingredients:

• 8 hard-boiled eggs (quartered)
• 1/4 cup – Butter
• 1/4 cup – flour
• 1.5 cups – Milk
• 1/2 cup – thick Cream
• 2 tbsp – finely chopped Coriander leaves
• 1 tsp – chilli powder
• 1 cup – minced Capsicum
• 1/2 cup – minced Onions
• Salt and pepper to taste

Method:

  1. Melt the butter in a saucepan and remove from the fire.
  2. Blend in the flour and gradually add the milk and cream.
  3. Return pan to fire and stir constantly until it thickens.
  4. Add all the remaining ingredients and stir well.
  5. Makes 4 servings.
