Ingredients:
• 300 g – chicken, cut into small pieces
• 3 – onions, chopped
• 2 tsp – chopped Mint
• 1 tsp – pepper powder
• Salt to taste
• 2 tbsp – Tomato sauce
• 1 tsp – Butter
• 1 – Egg beaten
• 3 tbsp – oil
• 3 tbsp – bread crumbs.
Method:
- Cook chicken with salt in a little water till tender.
- Remove from heat and cool.
- Shred into very small flakes.
- Mix in the chopped onions, mint, pepper, salt, tomato sauce and butter.
- Form into oval shapes and flatten with a knife.
- Heat oil in a flat pan.
- Dip each cutlet in the beaten egg, roll in breadcrumbs then shallow fry on both sides till brown.
- Drain and serve.
