
Ingredients:
• 4 cups – unripe Banana pieces
• 2 cups – Coconut oil for frying
• 1 1/2 cups – Brown sugar
• 1/2 cup – water
• 1/4 tsp – dry Ginger powder
• 1/4 tsp – Cardamom powder
Method:
- Peel the unripe bananas and cut into 1/2 slices.
- Cut each slice into 4 pieces.
- Heat the coconut oil in a 7 to 8 skillet and fry the banana pieces until golden brown and crisp.
- Drain on paper toweling.
- Dissolve the brown sugar in the water.
- Boil for approximately 15 mins until it almost reaches the hard-ball stage.
- It should be a thick syrup.
- Add dry ginger powder and cardamom powder.
- Stir.
- Dip the banana cubes into the warm syrup.
- Stir.
- Remove from the syrup and spread on a plate to dry.
- When the pieces are completely cool, the syrup should not be sticky.
- Store the sweet banana pieces in an airtight container.
