Ingredients:

• Onion – 1 big
• Capsicum – 1 medium
• Carrot – 1 medium
• Cauliflower – a few florets
• Tomato puree – from 2 medium ripe Tomatoes
• slit Green chillies – 3
• ginger-garlic paste – 1 tsp
• Tomato ketchup – 2 tsp
• pepper – 1/2 tsp
• water- 1/2 cup
• salt to taste

Method:

  1. Cut all the vegetables into squares. Heat oil and add the onion pieces. Saute well till they change colour.
  2. Add green chillies and then the ginger-garlic paste.
  3. Saute well for 2 to 3 minutes till the raw smell of the ginger-garlic leaves.
  4. Add capsicum and saute well.
  5. Then add carrot and add the salt and the pepper.
  6. Mix all the vegetables together and simmer.
  7. In the meanwhile, prepare the puree and add the ketchup to it.
  8. Mix with 1/2 cup of water and add to the veggies.
  9. Cook with lid on.
  10. You can reduce the quantity of water if you want your veggies crunchier.
