
Ingredients:
• Onion – 1 big
• Capsicum – 1 medium
• Carrot – 1 medium
• Cauliflower – a few florets
• Tomato puree – from 2 medium ripe Tomatoes
• slit Green chillies – 3
• ginger-garlic paste – 1 tsp
• Tomato ketchup – 2 tsp
• pepper – 1/2 tsp
• water- 1/2 cup
• salt to taste
Method:
- Cut all the vegetables into squares. Heat oil and add the onion pieces. Saute well till they change colour.
- Add green chillies and then the ginger-garlic paste.
- Saute well for 2 to 3 minutes till the raw smell of the ginger-garlic leaves.
- Add capsicum and saute well.
- Then add carrot and add the salt and the pepper.
- Mix all the vegetables together and simmer.
- In the meanwhile, prepare the puree and add the ketchup to it.
- Mix with 1/2 cup of water and add to the veggies.
- Cook with lid on.
- You can reduce the quantity of water if you want your veggies crunchier.
