Ingredients:

• Flour – 1.75 cups
• Sugar – 1 cup
• Oil – 3/4 cup
• Curd – 1 cup
• Meetha soda – 1 level tsp
• Cocoa powder – 8 tsp
• Coffee – 1/2 tsp (Optional)
• Vanilla essence – 1 tsp
• Milk – 1 tbsp
• For icing:
• Cocoa powder – 2.5 tsp
• Icing Sugar – 4 tbsp
• Water – 3 to 4 tbsp
• Vanilla essence – 3 drops
• For decoration:
• Walnuts – 1/2 cup
• Cherries – 1/2 cup
• Grated chocolate – 1/2 cup

Method:

  1. Add oil, sugar and curd in a bowl and mix them in one direction using a spatula to form a thick mixture
  2. Sieve flour, soda, cocoa powder and coffee
  3. Add sifted mixture to the above curd mixture
  4. Mix in one direction.
  5. Add vanilla essence and milk and mix again
  6. Pour mixture in baking dish
  7. Microwave for 7-8 mins
  8. Check with the help of knife.
  9. For icing mixture:
  10. Add cocoa powder, essence, icing sugar and water and make a smooth paste
  11. Spread icing mixture on the cake
  12. Garnish with walnuts, cherries and grated chocolate.
  13. Cool and store in air tight container in the fridge for a few days
