Ingredients:
• 100 gm – fresh dates, pitted and chopped
• 90 gm – dried figs, chopped
• 75 gm – butter, melted
• 300 ml – water
• 1 tsp – soda bicarb
• 200 gm – raw Sugar
• 2 eggs, lightly beaten
• 2 tbsp – chopped Walnuts
• 1/2 tsp – vanilla essence
• 190 gm – self rising flour
• For the sauce:
• 60 gm – Butter
• 250 gm – soft Brown sugar
• 1 cup – Cream
• 1 tsp – vanilla essence
• 2 tbsp – grated Lemon rind
Method:
- Grease a microwave-safe dish with softened butter.
- Place the dates, figs and water in a large bowl and cook on High for 6 mins.
- Mash the dates and figs with a fork.
- Add and stir the soda bicarb until it foams.
- Keep aside to cool. Add butter and mix.
- Add vanilla essence and sugar, mix well.
- Gradually add the eggs, beating well after each addition.
- Add the sifted flour and walnuts.
- Mix gently. Do not overbeat, just mix.
- Pour the mixture into the greased dish and cook on medium high for 6 mins.
- Leave to stand for 4 mins. before serving.
- Turn the dish upside down to remove pudding.
- Serve immediately with hot sauce.
- For sauce:
- Combine the cream, butter, sugar, vanilla essence and lemon rind in a microwave safe bowl and cook on High for 5 mins. and 30 seconds, stirring well after each minute.
