
Ingredients:
• 2 cups – Cake Flour
• 2.5 tsp – baking powder
• 1/2 tsp – salt
• 1/2 cup – Sugar
• 1/2 cup – Butter or margarine
• 1/2 cup – chopped Walnuts
• 1/2 cup – sliced dates, washed and dried
• 1/2 cup – Milk
• 1 – Egg
• 1 tsp – vanilla essence
Method:
- Sift the flour with the baking powder and salt.
- Add the sugar.
- Rub in butter with your fingertips, aerating the flour at the same time.
- Add the dates and nuts.
- Beat the egg, mix it with the milk and essence.
- Make a well in the centre of the flour mixture, pour in the liquid ingredients and gradually mix into a smooth batter of stiff consistency.
- Bake for an hour at 350 degrees F. If necessary, bake for 15 minutes longer, reducing heat to 300 degrees F.
