Ingredients:
• 2 – large avocados, peeled and finely chopped
• 1 sprig – Spring onion greens, finely chopped
• 1 tsp – coriander leaves, finely chopped
• 1 tsp – Mint leaves, finely chopped
• 1 – green Cabbage leaf, finely chopped
• 1/4 cup – Peanuts or almonds, skinned, roasted, coarsely crushed
• 1 tbsp – Lemon juice
• For the dressing: 1 tbsp – white Vinegar
• 1 tbsp – Corn syrup/ honey/ soft Brown sugar
• 1/4 tsp – mustard powder (yellow)
• 1 tiny sprig – dill leaves, finely chopped
• 2 tbsp – Olive oil
• 1/2 tsp – pepper
• salt to taste
Method:
- Sprinkle lemon juice over the avocados and toss lightly. Chill till required.
- Add all the other ingredients.
- Mix and refrigerate till serving time.
- For the salad dressing: Mix all ingredients well. Add to the avocado mixture. Toss lightly and serve immediately.
