Ingredients:
• 3 – drumsticks, tender
• 4 – eggs
• 1 cup – finely chopped, Onions
• 1/3 cup – chopped, Tomatoes
• 1 – Green chilli
• 1 sprig – Curry leaves
• A pinch – mustard
• A pinch – cumin
• 3 – crushed Garlic Cloves
• 1 tsp – Red Chilli power
• 1/4 tsp – Turmeric
• Salt to taste
• 1 tsp – coriander powder
• 3 tbsp – oil
• Water
Method:
- Heat oil in a deep pan, splutter mustard and cumin, add curry leaves and green chilli and saute
- Add the onions, salt and fry till they turn golden
- Add drumsticks, potatoes and fry for 2 to 3 mins to remove the raw smell.
- Add tomatoes and turmeric, fry till the tomatoes become completely soft and pulpy
- Add red chilli powder, coriander powder, garlic and saute for a minute
- Pour water and cook on a medium flame.
- Meanwhile, roast the eggs in a tsp of oil in a separate pan and drop them in the curry.
- Cook till the drumsticks are completely done.
