Ingredients:
• 4 -small Brinjals or Bitter gourd
• 2 -tomatoes
• 2 tbsp- Dhania powder
• 1 tsp -garam masala
• 1 tsp -turmeric
• 1 tsp -red chilli powder
• salt
• 4 tbsp -oil or Ghee
• 1/2 bunch -cilantro
• 1 -chopped Onion
• 4 Cloves – Garlic
Method:
- Take a deep-bottom pan or kadai (nonstick). Add oil and fry chopped onion and crushed garlic.
- Stir the onion till the colour changes into light brown.
- Slit the brinjals vertically without cutting the crown of the brinjal.
- After cutting the brinjals, immediately add them to the kadai.
- Add turmeric, red chilli powder, salt, dhania powder, garam masala, and tomatoes, and stir it.
- Cover the kadai with a perforated lid and let it cook without adding water.
- After the brinjals are done, add the chopped cilantro.
- Serve this dish with chapati or puri.
