Ingredients:
• 30g – Butter
• 1 1/2 tbsp – plain flour (maida)
• 1 1/4 cups – Milk
• 3/4th cup – grated cheddar cheese
• 1/2 – broccoli, cut into florets
• 1 tbsp – chopped Mint
• Golden crumb topping
• 30 g – Butter
• 1.5 cups – fresh breadcrumbs
• 4 tbsp – coriander or Parsley
Method:
- Melt butter in a microwave safe dish for 1/2 a min. on HIGH.
- Whisk in the flour and cook further on HIGH for 20 seconds.
- Gradually, whisk in the milk until the flour, butter and milk are well combined.
- Cook on HIGH for 4 mins, whisking after 2 mins.
- Mix the grated cheese into this and keep aside.
- Cover the broccoli and cook for 5 mins. on HIGH.
- Pour the cheese mixture over the cooked broccoli and cook for 1 min. on HIGH.
- Golden Crumb Topping:
- Melt the butter in a non-stick frying pan and add the breadcrumbs.
- Cook until the crumbs turn golden in colour.
- Sprinkle the crumbs and coriander over the broccoli. Serve hot.
