Ingredients:
• 3 eggs – beaten
• 500 g – large Brinjals
• 2 – Onions
• Oil
• 1 tbsp – Mustard oil
• 1/4 tsp – pepper
• Salt to taste
• 1 bunch – coriander leaves, minced
Method:
- Wash and dry the brinjals
- Smear them with mustard oil and bake in a very hot oven at 260 degrees until soft and pulpy
- Peel the brinjals and mash the pulp thoroughly Keep aside
- Heat the oil and fry the onions till soft and golden brown
- Add the brinjal pulp and cook till the mixture is well blended and deep brown
- Add the eggs, salt and pepper
- Cook over a low heat for 10 mins, stirring constantly
- Add the coriander leaves, blend well and serve immediately
