
Ingredients:
• 3 eggs
• 1/2 cup – minced Onion
• 1/2 cup – grated cheese
• 8 large firm Tomatoes
• 1 tsp – chilli powder
• 1/2 tsp – Cumin seed powder
• Oil
• 1/2 cup – minced Capsicum
• 3 Cloves garlic, minced
• Salt to taste
• Grated cheese for topping
Method:
- Slice off tops of the tomatoes and scoop out the pulp.
- Place tomato cases evenly on a greased baking dish.
- Heat the oil and saute the onions and add the garlic.
- Then add the chilli and cumin seed powders.
- Fry for a few mins. Beat the eggs well.
- Add the eggs to the onion mixture along with the tomato pulp, capsicum, grated cheese and salt.
- When the mixture becomes creamy, fill the tomato cases with it and sprinkle with grated cheese.
- Bake in a moderate oven at 190 degrees C until the cheese has melted.
- Makes 4 servings.
