
Ingredients:
• 200 gm – sausages
• 1 can – Cream style sweet Corn
• 4 eggs – beaten
• 1 onion, chopped
• 2 cubes of cheese, grated
• 1 tbsp. – parsley, chopped
• 2 tbsp. – Butter or refined oil
• salt and pepper to taste
Method:
- Skin the sausages, if desired and cut into pieces, one centimeter long.
- Heat the butter or oil in a frying pan. Add the sausages and onion. Cook, stirring on medium high heat until browned, for about 5 mins.
- Stir in the tinned corn and mix well to blend, adding 1-2 tbsp. water, only if necessary.
- Add the eggs, salt, pepper and parsley, mixing well. Cook over a gentle heat, stirring frequently until the eggs are lightly scrambled.
- Turn into an ovenproof dish and sprinkle with the cheese.
- Cook in a preheated grill until the cheese is golden and bubbles for about 5 mins. If you do not have a grill, just mix the cheese in the frying pan itself.
- Serve at once with toast.
