Ingredients:
• 8 hard-boiled eggs
• 250g – mushrooms, sliced
• 1 tbsp – parsley, chopped
• 1 green chilli, chopped
• 30 gm – flour
• 1 cup – Milk
• 1/2 tsp – pepper
• 4 tbsp – grated cheese
• 2 tbsp – Butter
• Salt to taste
Method:
- Melt 1 tbsp. of butter and add the flour.
- Cook gently for a few mins, stirring constantly.
- Do not brown. Remove the pan from the fire and gradually stir in half the milk.
- Blend well and return to the fire.
- Simmer, stirring constantly till it thickens.
- Now gradually add the remaining milk.
- Add the chopped parsley and chilli and stir gently.
- Simmer for 1 min more, then remove from the fire. Keep aside.
- Saute mushrooms in the remaining butter and add to the sauce.
- Chop the eggs and stir into the sauce.
- Grease a baking dish and pour the mixture into this.
- Sprinkle top with cheese and bake in a moderate oven at 190 degrees C till the top is golden brown.
- Makes 4 servings.
