Ingredients:

• 6 – hard boiled Egg (cut into halves)
• 2 – onions, chopped
• 1/2 tsp – dry mustard
• 1 tbsp – Butter
• 1 tin – Mushroom soup
• 1/2 cup – Milk
• 4 tbsp – grated cheese
• 1 Capsicum
• 1/2 tsp – pepper
• Salt to taste

Method:

  1. In a pan melt the butter, fry the onions and capsicums till golden brown
  2. Add the mustard, pepper and salt and mix well with the onions and capsicum
  3. Add the mushroom soup and milk and simmer, stirring constantly.
  4. Add the cheese and continue to stir until the cheese has melted and the sauce has a smooth texture.
  5. Put the eggs onto a flat dish and pour the sauce over it.
