Ingredients:

• eggs – 3
• Potato – 200 g
• Cauliflower – 100 g
• Carrots- 100 g
• Tomatoes – 150 g
• Onions – 200 g
• Green chillies -2
• Coconut-1/2
• Lemon-1
• Ginger – small piece
• Turmeric powder – 2 tsp
• Oil – 15 ml
• Salt to taste

Method:

  1. Hard boil the eggs, peel the potatoes and quarter them. Wash the cauliflower and break it into small florets
  2. Peel carrots and cut it into pieces
  3. Slice onions and ginger and slit the green chillies
  4. Grate coconut and extract the 1st, 2nd and 3rd milk
  5. Extract juice from lemon
  6. Heat oil and fry onions, green chillies and ginger
  7. Add turmeric powder and potatoes. Add third extraction of coconut milk and cook till potatoes are 3/4 th done
  8. Then add carrots and cauliflower and cook them. Once the vegetables are well-cooked, add remaining extraction of the coconut milk and lime juice and simmer
  9. Finally add eggs and cook till done
