Ingredients:

• Onion – 1
• eggs – 4
• Capsicum – 2
• Red Chilli powder – 1/2 tsp
• Oil – 1 tbsp
• Salt as per taste
• Turmeric powder – 1/4 tsp
• Cumin seeds – 1/2 tsp
• Coriander leaves – a few sprigs

Method:

  1. Heat oil in a pan. Add cumin seeds to it
  2. Then add finely cut onion. Fry it till golden brown
  3. Add turmeric powder, red chilli powder and salt.
  4. Then add capsicum and let it cook for 10 mins on a simmer with a lid
  5. Now add the eggs and cook it till bhurji is done
  6. Garnish with coriander or parsley leaves.
