
Ingredients:
• Onion – 1
• eggs – 4
• Capsicum – 2
• Red Chilli powder – 1/2 tsp
• Oil – 1 tbsp
• Salt as per taste
• Turmeric powder – 1/4 tsp
• Cumin seeds – 1/2 tsp
• Coriander leaves – a few sprigs
Method:
- Heat oil in a pan. Add cumin seeds to it
- Then add finely cut onion. Fry it till golden brown
- Add turmeric powder, red chilli powder and salt.
- Then add capsicum and let it cook for 10 mins on a simmer with a lid
- Now add the eggs and cook it till bhurji is done
- Garnish with coriander or parsley leaves.
