Ingredients:

• 6 – hard boiled eggs, shelled and halved
• 2 – big onions, sliced finely
• 10 – green chillies, sliced lengthwise
• 1 tsp – chopped Ginger
• 1 tsp – chopped Garlic
• 1 cup – thick Coconut Milk
• 1/2 tsp – Turmeric powder
• 3 tbsp – oil
• Salt to taste

Method:

  1. Heat oil in a suitable pan and lightly fry the hard boiled eggs for about 3 mins
  2. When they turn light brown, add all the other ingredients.
  3. Mix well so that the eggs are covered.
  4. Cook on medium heat till the gravy thickens.
  5. Serve with rice or bread.
