Ingredients:
• 15 tbsp – bread crumbs, heaped
• 10 tbsp – plain flour, heaped
• 10 tbsp – sugar, powdered
• 8 tbsp – oil, Sunflower oil
• 6 tbsp – fresh curds
• 6 tbsp – Milk
• 6 drops – vanilla essence
• 2 tsp – baking powder
• 3/4 tsp – baking soda
• 1 tbsp – tutti fruitti
• 1 tbsp – Cashew nut pieces, (dust with a pinch of maida)
• 2 tbsp – desiccated Coconut powder
• 2 drops – Orange food color (optional)
Method:
- Sieve maida, add coconut powder and bread crumbs, mix thoroughly and keep aside
- Mix milk, powdered sugar, curd, oil, baking powder and baking soda and blend well
- Keep aside for 2 to 3 min
- Add maida mix, spoon by spoon to the above milk mix.
- Stir continuously in one direction without forming lumps, use hand blender for better results)
- Add essence, tutti frutti and food colour mix well
- Pour the batter into a greased microwave safe tray
- Spread cashew over the batter and bake on micro high for 3 min
- Check once and bake again for 3 to 4 min (check oven temp)
- Insert a knife to check if baking is complete
- When it is done, cool and cut into pieces
