Ingredients:
• 1.5 cups – All-purpose flour
• 1/2 cup – Canola Oil
• 1/2 cup – Cornmeal
• 1 tbsp – White Vinegar
• 1/4 cup – Hot water
• 1/2 cup – Dates puree
• 3/4 cup – Honey
• 1/2 tsp – Baking powder
• 1 tsp – Baking soda
Method:
- Soak a cup of pitted dates in hot water for half an hour. Grind them as fine puree and use them as per need.
- Meanwhile, pre-heat the oven to 350 degree F.
- Sieve the all-purpose flour along with the baking powder and baking soda.
- Now, add the cornmeal to the sieved flour. Keep aside.
- Beat together the oil and honey for a few minutes. Add dates puree and white vinegar. Beat everything together until they are well mixed.
- Finally, add the flour-cornmeal mixture and hot water. Mix everything well with a spatula.
- Don’t overmix the muffin batter. Pour the muffin batter to the silicon muffin mould and bake for 15-20 minutes until a skewer inserted comes out clean.
