
Ingredients:
• flour – 2 cups
• Milk – 300 ml
• sodium bicarbonate – 1.5 tsp
• dry Ginger powder – 1 tsp
• Cinnamon powder – 1 tsp
• candied Ginger – 2 tbsp
• soft Jaggery – 1/2 cup
• Sugar – 1/2 cup
• Butter – 1/2 cup
• chopped nuts – 2 tbsp
• salt -1/2 tsp
Method:
- Mix together flour, ginger and cinnamon power and salt.
- Stir in the candied ginger.
- Dissolve jaggery in milk and strain.
- Sprinkle 1 tbsp of water over sugar and place on a low flame till it is caramelized.
- Add 4 tbsp of hot water to it and make a thick syrup.
- Add 4 tbsp of this syrup to the milk and jaggery liquid.
- Add butter to it and heat gently till the butter is melted.
- Cool and add to the flour mixture.
- Lastly, mix soda with 1 tbsp of boiling hot water and add it to the batter.
- Pour in a greased pan and sprinkle chopped nuts on top.
- Bake in a mode oven (160 C) till done. About 35-40 minutes.
