Ingredients:
• 1 cup – Whole Wheat flour
• 1/2 cup – Sugar
• 1/4 tsp – Salt
• 1/4 cup – Mashed Sweet Potato
• 2 tbsp – Raisins
• 1/2 tsp – Baking powder
• 1/2 tsp – Cardamom powder (coarsely powdered)
• 1/2 cup – Butter (room temperature)
• Milk (as needed)
Method:
- Pre heat the oven to 350 degrees F.
- Mix flour, sugar, salt, baking powder, raisins and cardamom powder well with your fingers in a bowl.
- Add butter and mashed sweet potatoes to the flour mixture, mix well, finally sprinkle sufficient milk to make a soft dough.
- Divide the dough into 15-20 equal parts.
- Make them into balls and flatten each ball.
- Place the flattened balls on a baking sheet leaving some space between each cookie.
- Bake the cookies for about 15-20 minutes or until cookies turn lightly golden brown.
- Let the cookies cool down for two to three minutes before taking them off the cookie sheet.
- Serve with coffee or tea.
