Ingredients:

• 1 cup – all-purpose flour
• 1/2 cup – Corn flour
• 1/2 cup – whole Wheat flour
• 1/2 tsp – Cardamom powder
• 1 tsp – baking soda
• 1 tsp – baking powder
• 1/4 tsp – salt
• 1-2 cup – Butter /Canola Oil
• 1/2 cup – Brown sugar
• 1/4 cup – tutti fruitti + I table spoon all-purpose flour

Method:

  1. Add the dried fruits to 1 tbsp dried flour mixture and mix well till they are well coated and keep it aside.
  2. Preheat the oven to 350 F or at 180 degree.
  3. Sift all the dry ingredients; flour, baking soda, baking powder, salt and cardamom powder.
  4. Add sugar and oil /butter.
  5. Add the floured tutti fruit and knead a dough.
  6. Make a log of the dough and keep it aside for 10 minutes.
  7. Shape each portion into a log about 8-10 inches long.
  8. Bake the log for 20-25 minutes, until they turn brown around the edges.
  9. Remove them from the oven and let it rest for at least 20 minutes.
  10. Lower the oven temperature to 325F.
  11. Carefully cut the cooled logs into slices.
  12. Bake the rusk once again for 20-25 minutes, until they are dry and crisp.
  13. Remove them from the oven and cool.
