Ingredients:

• 1 – Eggplant (chopped)
• 1/2 cup – Snake gourd (chopped)
• 1/2 cup – Cooked Toor Dal
• 1 – Onion (chopped)
• 2 – Tomatoes (ripen and juicy)
• 2 – Green chillies (slit opened)
• 1 tsp – Sambar powder
• 1 tsp – Lemon juice
• 2 tsp – oil
• 1/4 tsp – Mustard Seeds
• 1/4 tsp – Urad Dal
• 3 Dry Red Chillies
• 1/4 tsp – Asafetida powder
• Curry leaves
• Chopped Coriander leaves

Method:

  1. Heat oil, add mustard seeds and let splutter.
  2. Add urad dal, dry red chillies and asafoetida powder and stir for a minute.
  3. Add chopped onions, chopped tomatoes, slit opened green chillies, salt, saute everything for few minutes until the tomatoes turn mushy.
  4. Add the chopped eggplant pieces, chopped snake gourd pieces and saute for few minutes until the vegetables get half cooked.
  5. Add a cup of water and sambar powder to the vegetables and leave to boil.
  6. Add the cooked toor dal to the vegetables, cook until the vegetables get well cooked.
  7. Add chopped coriander leaves, curry leaves and lemon juice to the sambar and switch off the stove.
  8. Serve with rice and papads.
