
Ingredients:
• 1 – Eggplant (chopped)
• 1/2 cup – Snake gourd (chopped)
• 1/2 cup – Cooked Toor Dal
• 1 – Onion (chopped)
• 2 – Tomatoes (ripen and juicy)
• 2 – Green chillies (slit opened)
• 1 tsp – Sambar powder
• 1 tsp – Lemon juice
• 2 tsp – oil
• 1/4 tsp – Mustard Seeds
• 1/4 tsp – Urad Dal
• 3 Dry Red Chillies
• 1/4 tsp – Asafetida powder
• Curry leaves
• Chopped Coriander leaves
Method:
- Heat oil, add mustard seeds and let splutter.
- Add urad dal, dry red chillies and asafoetida powder and stir for a minute.
- Add chopped onions, chopped tomatoes, slit opened green chillies, salt, saute everything for few minutes until the tomatoes turn mushy.
- Add the chopped eggplant pieces, chopped snake gourd pieces and saute for few minutes until the vegetables get half cooked.
- Add a cup of water and sambar powder to the vegetables and leave to boil.
- Add the cooked toor dal to the vegetables, cook until the vegetables get well cooked.
- Add chopped coriander leaves, curry leaves and lemon juice to the sambar and switch off the stove.
- Serve with rice and papads.
