Ingredients:
• 6 – Hardboiled eggs
• 1 Clove – Garlic, minced
• 1 – small onion, sliced
• 1 tbsp – Oil
• 1/2 tsp – Salt
• Pepper to taste
• 1 tbsp – Curry powder
• 1 cup – Coconut Milk
• 1 – small sweet pepper
Method:
- Peel the hard-boiled eggs and cut into quarters.
- Fry onion and garlic in oil until golden.
- Add the curry powder, salt and peppers.
- Mix well and gradually add the coconut milk.
- Add the chopped sweet pepper.
- Cook until the mixture thickens.
- Remove from heat and add the cooked eggs.
