Ingredients:
• 1 cup – fresh leaves/methi washed and chopped finely
• 4 – potatoes, peeled and cut into quarters
• 1 tsp – Cumin seeds
• 1 tsp – coriander powder
• 1 tsp – chopped Ginger
• 1 tsp – chopped Garlic
• 2 – whole red dry chillies
• 3 – green chillies, chopped
• 1/2 tsp – Turmeric powder
• 2 tsp – oil
• salt to taste
Method:
- Heat oil in a suitable pan and add cumin seeds, ginger, garlic, red chillies and green chillies and fry for a few minutes.
- Add the potatoes, fenugreek leaves, coriander powder, turmeric powder and salt and mix well.
- Add sufficient water and cook covered on low heat till the potatoes are cooked and all the water dries up.
- Serve as a side dish with rice or chapattis or rotis.
