Ingredients:

• 2 cup – plain flour
• 2 tbsp – Ghee or oil
• 2 – potatoes, mashed
• 2 – Green chillies
• 3-4 Cloves – Garlic
• 1 piece – Ginger
• 1/2 cup – paneer, grated
• 1 tbsp – coriander chopped
• 1 tsp – Lemon juice
• 1 tbsp – oil
• Salt to taste
• A few drops – green food colour
• Oil to deep fry

Method:

  1. Mix plain flour, ghee and salt
  2. Knead into pliable dough, adding water
  3. Cover with a moist cloth and keep aside
  4. Grind together ginger, garlic, chillies
  5. Heat oil, add garlic paste, fry for a moment
  6. Add mashed potatoes, lemon juice, salt, coriander, paneer and mix well
  7. Divide into 15-17 parts, roll into round balls
  8. To a fistful of dough add green colour and mix well
  9. Divide the white dough into 15 -17 parts and roll into small rounds
  10. Place a ball of filling in the centre
  11. Make a strip out of a tiny bit of green dough.
  12. Pull edges up around the filling like a pouch.
  13. Wrap green dough string around neck of pouch.
  14. Press and secure.
  15. Deep fry in hot oil, on low flame till light brown.
  16. Drain, and place on kitchen paper to remove excess oil
  17. Serve hot with tamarind chutney or sauce
