Ingredients:

• 1 cup moong, washed and soaked for 3 hours
• 1/4 cup rice, washed and soaked for 1/2 hour
• 2 carrots, diced
• 1/4 cup French beans
• 1/2 tsp minced Garlic
• 3 cups Chicken broth
• 1 cup water
• few Paneer pieces for garnishing
• 2 hard-boiled eggs, chopped
• For Dressing-
• 1/4 cup chopped Parsley
• 2 tbsp Vinegar
• 1 tbsp Lemon juice
• 4 tbsp Olive oil
• 1/4 tsp pepper powder
• Salt as per taste

Method:

  1. Bring to boil chicken broth and water Add moong
  2. Let it cook for 15 mins.
  3. Add rice, carrots and french beans
  4. Cook till all the liquid is absorbed
  5. Remove from fire
  6. In a bowl, mix together all the ingredients of dressing
  7. Coat the cooked salad with the dressing
  8. Put in a dish
  9. Garnish with paneer and egg pieces
