
Ingredients:
• 1 cup moong, washed and soaked for 3 hours
• 1/4 cup rice, washed and soaked for 1/2 hour
• 2 carrots, diced
• 1/4 cup French beans
• 1/2 tsp minced Garlic
• 3 cups Chicken broth
• 1 cup water
• few Paneer pieces for garnishing
• 2 hard-boiled eggs, chopped
• For Dressing-
• 1/4 cup chopped Parsley
• 2 tbsp Vinegar
• 1 tbsp Lemon juice
• 4 tbsp Olive oil
• 1/4 tsp pepper powder
• Salt as per taste
Method:
- Bring to boil chicken broth and water Add moong
- Let it cook for 15 mins.
- Add rice, carrots and french beans
- Cook till all the liquid is absorbed
- Remove from fire
- In a bowl, mix together all the ingredients of dressing
- Coat the cooked salad with the dressing
- Put in a dish
- Garnish with paneer and egg pieces
