
Ingredients:
• 1 cup – Maida
• 1 cup – fresh coconut, grated
• 1/2 cup – unsalted Butter at room temperature
• 1/2 cup – Sugar
• 1 tsp – baking powder
• 2 tbsp – Milk
• 1 tsp – Cardamom powder
• 1 tsp – baking powder
• 1 tsp – vanilla essence
• 1/2 cup – desiccated Coconut
Method:
- Preheat oven at a temperature of 180 degrees centigrade.
- Mix together all-purpose flour, 1/4 cup of dry coconut powder, cardamom powder, baking powder.
- Beat the butter and sugar together till it becomes light and creamy.
- Add fresh coconut to the butter and sugar mixture and mix well.
- Add the rest of the ingredients to this creamed mixture and knead to make a dough.
- Divide this dough into equal portions and make small rounds.
- Roll this round in the remaining dry coconut powder, flatten it slightly and place on baking tray.
- Bake the cookies in pre-heated oven for 10-15 mins till they are golden brown.
- Cool the cookies and store the cookies in an air tight container.
