
Ingredients:
• Butter – 4 tbsp
• flour – 1 cup + 2 tbsp
• Corn flour – 2 tbsp
• grated Orange rind – 2 tsp
• powdered Sugar – 1/3 cup
• chopped mixed fruits – 2/3 cup
• candied Ginger – 1 tbsp, chopped
• Walnuts – ½ cup, chopped
• baking powder – 1 tsp
• mixed spice powder – ½ tsp
• Milk – ½ cup
Method:
- Melt butter, cool slightly and beat with sugar and rind.
- Mix flour, corn flour and baking powder and spice powder together and add fruits and nuts to it.
- Add this to sugar mixture with milk. Mix till smooth.
- Pour in a prepared tin and bake in oven till done.
- Pour 5 tbsp of orange squash (or 2 tbsp of orange juice + 3 tbsp of sugar) on top while the cake is hot.
- Allow the cake to cool in the tin and serve after cut into bars.
